Pin static version 2.0.0 for fork distribution via uv git source

uv-dynamic-versioning is not evaluated during uv's git source metadata
extraction, leaving dependents that require mcp>=0.1.0 unable to resolve.
Setting a static version on this fork's pyproject.toml side-steps that.
