this PR adds explicit documentation for configuring an OIDC connection between GitLab & Coder. I've tested the integration config on a self-hosted GitLab instance.
it also splits out the TLS & OIDC claims content into their own respective sub-sections.
closes #5349 along with customer requests for this content.
