Revert "Promote to Beta in README.md (#161)" (#168)

This reverts commit 8b5550b that updated the README to specify that the release is a beta release. Rationale: we decided not to go ahead with the beta in the upcoming release. We want to get a few more changes, some of which are semver major, before the beta release label.
